Green Tomatoes & Onion           

                                                     Chau Chau           

            10 12 Green Tomatoes
1 Onion   Yellow or White
Optional   Celery
Optional   Cabbage  

                        Makes 2 pints

          Find very green medium size tomatoes.  Clean well
Cut out top and bottom of tomatoes
Cut green tomato into 3 pieces vertically
Begin slicing green tomato into 1/8 to inch thick slices
Cut onion into smaller pieces same as the tomatoes

                        Optional Cut up celery into very small pieces

                        Optional Cut up cabbage into very small pieces

                        No garlic or dill and no pink tomatoes

                        Salt and Pepper to taste
1 Tblsp Vinegar
3 4 Tbsp Sugar
1 2 Tbspn Mustard
Mix all in pot and add water to cover

                        Cook for 1 Hour

                        Have clean 2 pint jars or 1 qt ready   Pack jars when hot

                        Place lid & Ring on Jars

                        Keep jars in room temperature and covered for color

                        Refrigerate when ready to eat or after jar is open

                         Chau Chau great on Bread & Mayo for Sandwich
